kids cupcakes in a box?

  • Feb. 9th, 2010 at 12:33 AM
Does anyone remember buying/using a cupcake mix that was especially geared towards kids?  The last time I remember making it was maybe 12-15 years ago.  It would have been sold in Canada and thus likely sold in the US as well.  I can't for the life of me remember the brand name, but I'm curious as to whether or not it still exists.  I remember making the cupcakes with my mom.  It was the kind of mix that you just added milk.  It also came with a mix for the icing... I remember the icing could be bought in multiple colours.  I definitely remember white and pink icing flavours.  If anyone has a clue what I'm talking about, let me know!  I'd love to be able to find it again if it still exists.

Well Hi There!

Name: Kyla ♥
  • Location: California, US
  • Your cupcake history: Ummm, Well I started them once i realized that i wanted to be good at baking and once i realized that cookies just weren't for me. :]
  • Why you like cupcakes: They're cute and give great opportunities for decorating without making a big cake.
  • Anything to share? I kinda forgot to introduce myself before i posted something. Whoops. ^^ Oh and i made cupcakes today. *smiley* One more thing, i tend to eat my cake batter which almost always results in me getting a stomache after i pull my cupcakes out of the oven.

Hello :)

  • Location: Sydney, Aus
  • Your cupcake history: I am the queen of cupcakes in my house. I always mix by hand - Mum harps on about not using the Mixmaster but they always turn out light and fluffy anyway. I think that vanilla bean paste is one of the best things around and I think golden cupcakes are the cutest. However, I hate icing them.
  • Why you like cupcakes: I like cupcakes because they are the perfect size and the perfect snack. You just roll off the paper and pop it in your mouth - so more-ish. I love the slight stickiness at the bottom of the perfect cupcake as you peel off the coloured paper and the tiniest shreds of black vanilla scattered through the gold of the cupcake. I love their smell as they're in the oven. I love how brightly coloured cupcakes make anyone smile and I love that when I was at school, I was the queen of the homeroom birthdays, because I always brought cupcakes.
  • Anything to share? I made banana and choc chip cupcakes this morning. They are light and lush and beautiful, and even better heated in the microwave for 10 seconds. Some argue that they are muffins, but I know better. And vanilla bean paste is the god of good cupcakes. So too is mixing by hand and taste-testing the mix with a different fingertip at each stage.
Hi there, I have a deep fascination with various bake goods. To me, the most gift-able are cookies and cupcakes! I very rarely keep cupcakes for just myself. I love to surprise friends, coworkers and professors.

In fact, I have a ton of cupcakes I made and froze to give to my coworkers before I move away. I came to a wall about Cream Cheese Frosting. The tags did not appear to be of any help. I'm looking for a simple one that is well balanced. I do not want something just sweet or overly sweet- I'd like to be able to actually taste the cream cheese itself. Can anyone provide me with various recipes I can test out? I'd appreciate any assistance!

Lovey-dovey cupcakes

These were made for the birthday of a friend of mine although they could well pass for Valentine cupcakes. The birthday girl wanted something with hearts, so this is what I came up with. First time I've worked with two-colored frosting!
Pretties this way )
I hope you enjoy!

So I will be attempting to make cupcakes with fondant and fancy icing for Valentines day for my first time. I am a cupcake fan, but cannot really find any recipes that stand out to me that are just AMAZING sounding.. I need some opinions on recipes as well as frostings. I don't want to do just white cake, or red velvet, I want to do something spunky for Valentines day. ( I saw those Chocolate Cinnamon cupcakes, and wanted to die! How brilliant! ) so maybe something along those lines of recipes, something unexpected, but something you know is great! I cannot just look at a recipe and think :HEY! that's going to taste amazing: so any recommendations would be awesome! Thanks guys.

(Pairing of cupcake and frosting would be much appreciated)

Cupcakes for my friend's birthday. Great cakes, bad picture.
Vanilla cupcakes with white chocolate ganache, vanilla with vanilla buttercream icing, chocolate cakes with dark chocolate ganache, and chocolate with chocolate and kahlua buttercream. (I made the big one in the back as well).
The ganache didn't go as planned. Any good recipes to share?

Well my goal for the year in terms of cupcakes was to find a really good recipe for both the cake and some type of frosting/icing which i finally completed the other day! i found a marble cake recipe that can be a really good double as marbled cupcakes or just plain vanilla or chocolate ones. very nom!

also by chance found the perfect icing!!! i was trying to find a chocolate frosting the other day that didnt involve adding actual chocolate to the mix because we rarely have cooking chocolate and i stumbled across i think my soul mate in icing form!!

Recipe and photo under the cut XD )

First Post & Cupcakes to share!

♥ Name: Amanda
♥ Location: Traverse City, MI
♥ Your cupcake history: I've always enjoyed baking. Cookies, cakes, cupcakes, what have you...but only when needed. This past May, my mother and I started up a bakery, which kicked my baking into overdrive! I took some cake decorating classes, bought a bunch of cookbooks and have gone to town. Every week I try and new cupcake! :D
♥ Why you like cupcakes: Cupcakes can be fun and simple, or elegant and beautiful. They're small enough to give you that bit of cake you want without feeling (too) guilty afterwards. You can change them into anything that you want!
♥ Anything to share?: I've lurked for a while and finally got up the nerve to join in. This week I made Fresh Strawberry cupcakes (from Martha Stewart's Cupcake book, this is my cupcake bible!) with a Strawberry Whipped Buttercream frosting. These little cakes are to die for, so light and airy, but sinfully sweet and fresh!

What else could I be posting for...

  • Feb. 4th, 2010 at 12:21 PM
Other than for V-day!

I'm going to be baking some cuppys for my boyfriend for the occasion (duh) and I have a slightly interesting idea.

I was thinking about buying one of those silicone baking pan thingers in the shape of little hearts. Do you still need liners for them or are they kinda non-stick?

I was thinking of baking some red velvet cupcakes with strawberry icing and filling. I may also attempt to make them "ooze blood" someway or another...Was wondering if anyone had a good idea of what to use for that? Jam? Jelly?

Any feedback would be lovely ^___^

Help!

Okay so as you all know, Valentine's day is around the corner, and I have this best friend and were so close I call her my wife (and vice versa) so like at christmas and birthdays I get "to my lovely wife" cards and stuff... and instead of locking myself indoors away from any media on the 14th I though it'd be cool to make her some cupcakes and give her a card. Problem: what do I doooo??

She's kinda funky and I was thinking maybe Pink and black icing? or is black too morbid for valentines day? and I'd like to do a swirly thing... because swirls are awesome... but... any other ideas? Maybe do a run out heart and stick that on top?

All suggestions would be truly welcome!

Lately I've been noticing an interesting pattern in the orders that come my way. It seems that each time I start on a new character / theme, a couple of orders bearing the same character / theme will come knocking my mailbox! While I personally find it uncannily intriguing (since these clients aren't related to one another in any way), it definitely gives me more opportunity to improve on my fondant skills.

So here's sharing some Hello Kitty and Snoopy cupcake orders I've received within the span of 2 1/2 weeks :P

Intro :)

♥ Name: Rebecca, or Becca
♥ Age:19
♥ Location: Southern Arkansas (but I'm from Texas... I moved here in late November with my hubby)
♥ Your cupcake history: I don't really have a history, per-say. I've always enjoyed baking and decorating cupcakes and had the pleasure of working for a specialty catering company that dealt with food allergies so I got to do a lot of hands-on learning. I really wish I had written down recipes and taken pictures though!
♥ Why you like cupcakes: They're so. cute. Can't beat the tastiness or convenience of a little piece of cake, either!
♥ Anything to share?: On 2/5 I'm going to start baking a new cupcake recipe every week. I'm pregnant and going stir-crazy in the country so I hope this will help! Any recipe suggestions would be much appreciated as I am going to be scratch-baking and as I said above, have never bothered with writing down recipes.

Cupcake Dilemma

  • Feb. 2nd, 2010 at 7:49 PM
Hullo!
I was thinking about making cupcakes over the weekend and finally decided on making chocolate ones with raspberry filling and raspberry icing. My problem is that what should i use: seedless raspeberry jam or frozen/fresh rasberries and then puree them?!?

I want a tart, raspberry flavor to contrast the chocolate of the cupcakes, not too sweet either, more like Ghiradelli's raspberry filling for their chocolate bars. But, i just have no idea what would do it for me, the jam or the pureed raspberries!!

Help?

Butterscotch Cupcakes!

  • Feb. 2nd, 2010 at 6:55 PM
I've been wanting to make cupcake for weeks, but just couldn't find the time. So when I had a few free hours today, I decided to do it, and here are the results. These are buttery yellow cupcakes with butterscotch chips filled with butterscotch pudding and iced with chocolate butter cream with a hint of butterscotch schnapps frosting. The theme was butter, haha. More pics behind the cut.

Mmm butterscotch )

Cupcake question...

  • Feb. 2nd, 2010 at 6:00 AM
So, I am making cupcakes tomorrow. I am making a chocolate butter cake batter, and a Vanilla bean cake batter and putting both in the tray to make marble Cupcakes. Then- my idea was to put chocolate and regular butter cream in the piping bag and do a swirled icing to match. I may do some flowers on a few if I can remember how to!

I just can't decide what to top them with....Any ideas? I have some mini chocolate chips that may work.

Let me know if you come up with anything.

I'll be sure to post pictures tomorrow.
