Pork Spare Ribs: A Success Story!
It was my mother's birthday today, and it's our family tradition that the "Birthday Princess" gets whatever they want to eat on their birthday. My mother wanted ribs and bought a 3 1/2 slab or pork spare ribs for me to chef up. I've never cooked ribs before, and despaired at the lack of a grill and even the slightest clue how to make the ribs remotely palatable. So I turned to you fine people! I got a lot of great suggestions on how to cook them, and brought the suggestions to my mother to choose how she'd like her ribs cooked. She chose
pandoranoir's directions from my previous post.
Dry rub
1/2 cup brown sugar
3 teaspoons salt
2 heaping teaspoons paprika
1 teaspoon garlic powder
1 teaspoon Cavender's All Purpose Greek Seasoning
1 teaspoon cumin
1/2 scant teaspoon pepper
1/2 scant teaspoon lemon pepper
I tasted the rub, and WOW! It tasted almost exactly like Ruffle's brand BBQ potato chips. I wanted to eat a whole spoonful of it!
I rubbed this into the meat and let it sit in the fridge for an hour. I took it out and decided to rub a little more of the dry rub on there. Into a foil pouch in the oven it went at 300*F for an hour. I slathered on some BBQ sauce and shoved it in the oven for about 15 minutes on each side.
The result? Birthday Princess was so happy she didn't even share any of it with the dog! There's some leftovers for tomorrow, too! It was so good, I had four ribs, and I don't even like ribs!
The ribs.
Scalloped potatoes. (From a Betty Crocker box mix, but I topped it with extra cheese and parsley to make it look nicer.)
The picture of the steamed zucchini didn't turn out right, so there isn't a picture of those. However, there is a picture of my plate!
So thank you so much for everyone's suggestions! My mother says we're going to have to try the crock-pot method next time and decide which we like better.
