Greek Grape Cake with Orange
I made this for a gathering tonight and it got rave reviews. :)

greek grape cake

Ingredients:
300g almond paste
3 eggs
2 Tbsp. flour
2 oranges
2 Tbsp. rum
3/4dl granulated sugar
seedless grapes

Grate the almond paste with a cheese grater. Beat the eggs. Mix together the almond paste, eggs, and flour until it is smooth. Pour the batter into a greased and floured round cake pan and bake on the lower rack of the oven for about 35 minutes at 175 degrees Celcius. Let the cake cool.

Press the juice out of the two oranges and put it into a sauce pan. Add to the pan the zest of one of the oranges along with the rum and sugar. Cook over medium heat , letting it bubble but not boil, until it thickens (about 5 min.). Cool slightly then pour over the top of the cooled cake.

Cut the grapes in half length-wise and arrange on top of the cake.

That looks really beautiful.

Have you ever used another fruit on top? I think I'd like to try to sub sliced figs (in keeping with the Greek theme) for grapes, and see how that'd turn out. ^__^

This was the first time I'd made it so I haven't tried it with any other fruits. I can imagine that fig would be good, and still attractive as well.

Neat orange glaze idea. And hurray for the almond paste too! Very interesting, the need to grate it- like mushing it I imagine, just about seperation? Or do the bits need to be tinier than is usually marketed...

For altering fun, I'm seeing plum halves atop it as well.

Here the almond paste comes in long tubes so the need for grating is in indeed to make it into tiny bits so that it blends well into the eggs. Plums would be lovely on it.
