Banoffee Pie
This pie brings back happy memories of England for me. :) I just had a sudden thought of Keira Knightly in Love Actually where she brings whats-his-name a banoffee pie and had a sudden craving for banoffee pie. (Actually I had a very sickly-sweet-delicious banoffee pie slice at EAT deli/cafe in London recently. It was great.) Quite simple but oh-so-yummy. The below is a crude, home-style version. (still pretty darn good though!)

Banoffee Pie
1. readymade graham cracker pie crust (or you can crush Hobnobs or digestive biscuits if you're feeling DIYish)
2. 1 tin of condensed milk or 1 jar of confiture de lait (if you're feeling snobbish)
3. ripe bananas
4. whipped cream
5. Nutella (optional)*
6. cocoa powder/grated cinnamon for dusting

1. heat the condensed milk for about 15 minutes until it turns into toffee (i.e. brown goopy liquid) -- the traditional way is to put the unopened tin into a saucepan of boiling water, but according to the BBC website the can sometimes explodes (!). So I just heated it up in a normal pot. (Microwave doesn't seem to work, unless you want to Jackson Pollack the interior of your microwave oven.) Waterbath should have been better because the toffee ended up a bit lumpy for me.
2. Slice bananas into little round slices (not diagonal).
3. Let toffee cool slightly, pour over pie crust. Arrange sliced bananas on top. Let cool, then put in fridge to set.
4. Put whipped cream over the bananas, dust with cocoa powder and voila!

* Nutella is if you want an extra layer spread over the toffee. Alternatively, you can make chocolate hazelnut toffee but adding Nutella into the toffee.

If anyone wants a more complicated recipe for the pie, here is one from Anna Olsen (her show is called Sugar and is on Food Network Canada).

Banoffee Pie
Yield: 1

The combination of banana and toffee can be extremely addictive. I don't think I've seen anyone eat just one slice!
Ingredients:

Pastry Dough


1 cup ground almonds, lightly toasted
1 1/4 cups all purpose flour
2/3 cup sugar
zest of one lemon
3/4 tsp cinnamon
dash ground cloves
2/3 cup unsalted butter, cut into pieces and chilled
1 egg yolk
1 whole egg
1 tbsp brandy

Filling


3 banana
1 tin condensed milk
3 tbsp brown sugar
2 tbsp whipping cream
1 tbsp rum
1 tsp vanilla extract
2 tbsp unsalted butter

Topping


1 cup whipping cream
2 tbsp sugar
chocolate shavings or cocoa powder, for garnish

Directions:


Pastry Dough
Blend together almonds, flour, sugar, zest and spices. Cut in butter until the texture of coarse meal.


Stir together yolk, egg and brandy and blend into dough until it just comes together. Shape dough into a disc, wrap and chill for 2 hours.


Preheat oven to 350.


On a lightly floured surface, roll out dough to just greater than 1/4-inch thick.


Line a 10-inch tart shell with pastry, trim edges and chill 15 minutes.


Dock pastry with a fork and bake for 20 minutes, until golden brown around the edges.


Filling
Slice bananas and arrange in bottom of tart shell.


Stir together condensed milk and brown sugar in a heavy-bottomed sauce pot.


Have ready remaining ingredients. Whisking constantly over medium heat, cook condensed milk until it thickens, about 8-10 minutes. Remove from heat and whisk in whipping cream, rum, vanilla and butter.


Pour over bananas in tart and spread evenly. Chill for 30 minutes.


Topping
Whip whipping cream with sugar to soft peaks.


To Assemble
Spread whipped cream topping on top of tart. Sprinkle with chocolate shavings or a dusting of cocoa powder for garnish if you wish.

oh no the best way is definitely to boil the unopened can for four hours in water. produces wonderful toffee.
just make sure you remember to keep topping up the water and don't let it boil dry otherwise it will explode and you will get a sticky mess all over your cooker hood!

things to try are coffee instead od cocoa

adding vanilla extract to your cream or maybe adding crushed hazlenuts on top or maybe ground almonds in the pastry

one of my absolute FAVORITE desserts. Reminds me of Ireland. mmmmmmm :o)
