| Okay. Me being in Australia I can't say homebaked cookies would be good.
However, I'd love to send some famous Australian TIM TAMS to the LJ crew. They are totally the most delicious thing you have ever tasted. And it's a bonus for coffee drinkers as you can bite opposite ends and suck the coffee through it and have it mix with the chocolate inside!

| The late August shipment is on it's way...with a little something extra for Frank. Hope you enjoy.
As I didn't know if you had none egg eaters, I shipped some no-bake cookies in with the others. There are about 6 dozen in all.
I also added some stress relief materials (not that I think it's a stressful work environment) in the box. I'll let the recipients expound on that once they receive the package.

| Since I'm part of the LJ staff, I had some inside knowledge when I volunteered for my early-August cookies-for-LJ duty: the whole team was going to be together in one place for the first time in LJ history. All of the out-of-towners converged on Six Apart HQ this week for a long-planned team powwow.

| Hey guys, I'm in a bit of trouble here. I'm having some serious medical problems that have culminated in having to take medicine that makes me incredibly dizzy and drowsy. I am scheduled for the early July shipment. Is there anyone who can cover me for this, please? I know it's horribly last minute, but I've had a lot of other stuff on my hands the past week or so, the least of which is an impending MRI to see if I have a brain tumor. So, um... Help?

| Hey guys and gals. Mid-June shipper here. Going to be doing either some plain chocolate chips or a triple-crown dough I've got tonight and mailing them first thing in the AM, however... Quick questions I'm hoping everyone will be able to fill me in on.
Did we ever get labels? Did the addresses change? Did I still need that print out that was from, oh, a year or so ago?
Just wondering because I'm trying to get back up to my house in another city after baking here and I need to get the box set for my mom ( sunshine_lill) to ship off for me.
Anyone feel like taking me under their wing?

| I'm going to bake my cookies in a little while, and all the recipes I want to use call for eggs. Instead of spending forever looking for alternative recipes, I looked for alternative sources to eggs. I found a couple (god bless Vegetarian/Vegan websites) and figured I could post them here.
Agar powder: Use with recipes that call for egg whites. For each egg white, dissolve 1 tbsp plain agar powder in 1 tbsp water. Whip, chill and whip again.
Applesauce: Like banana, applesauce is great for sweeter baked recipes, such as muffins, brownies, and cake. For each egg, substitute 1/3 cup applesauce. Banana: Wonderful with desserts or sweet items like pancakes, and muffins. For each egg, substitute 1/2 small banana, mashed.
Flax seed: Great for pankcakes, breads, and other baking. Use 1 tbsp ground flax seed simmered in 2 – 3 tbsp water. Tip: Adding ground flax seeds to any recipe add Omega-3's to the recipe! You can buy ground flax seeds in the health section of most grocery stores.
Mashed potatoes / bread crumbs: For veggie loaves or burgers, used mashed potatoes, fine bread crumbs, cooked rice or oatmeal, or tomato paste to bind ingredients.
Pumpkin: For baked goods, you can replace each whole egg with 1/3 cup of cooked pumpkin. Great for muffins that have a hint of pumpkin flavor to them.
1 whole egg = 2 tbsp water + 1 tbsp oil + 2 tsp baking powder
1 egg = 2 tbsp water + 2 tsp baking powder
