Chocolate Lover's Biscotti
Melt together:
125 gms of Dark Chocolate - I used 85% lindt
125gms of butter
Beat until lightened:
2 eggs
1 cup of dark brown sugar and 1/2 cup of powdered sugar
Add:
1 teaspoon vanilla
chocolate mixture
Then add:
2 to 2-1/4 cups flour
1/2 cup unsweetened cocoa powder - I used Van houten, but please use the best you can
1-1/2 teaspoons baking powder
1 teaspoon salt
Divide dough into two logs: 3-1/2"x9"
Brush with beaten egg white
Bake at 350 degrees for 25 minutes. Cool partly or all the way if you have time. Cut into 1/2 inch slices. Bake at 275 degrees for 20 minutes. Turn slices over and bake 20 minutes.
Very easy to cut because no nuts or fruit in the way. But you could add them if you like. Crunchy but not break your teeth crunchy. Not authentic Italian biscotti. Great for dunking in coffee or Clare's patented Hot Cocoa!

Hi Everyone!
Stumbled on to this community about a month ago and have been lurking around reading all the yummy posts.

Just wanted to share a little chocolatey-coffee treat an ex-boyfriend once served. It's called the TimTam Slam.

Ingredients:
1) A TimTam (yummy chocolate covered biscuits from Arnotts of Australia), any flavour, though Special Dark and the Tia Maria Varieties are the best.

2)Have a cup of coffee with you (not to hot coz you'll scald your tongue).

Procedure:

1) Bite ends of Tim tam and hold in mouth
2) Suck coffee through timtam, simultaneously bringing timtam into mouth (or else it will crumble)
3) Enjoy all the flavours in your mouth and do again.

In fairness, said ex-boyfriend did not invent this way of eating timtams, it's printed on the package. He just had the brilliant idea to use Tia Maria flavoured tim tams :D

I received an e-mail inquiry this weekend asking if I had any no-bake chocolate or peanut butter recipes that used Splenda instead of sugar. I found a few links for the person who asked, and figured I'd share them here too!

Does anyone know how to make the best cookie cake?

I wanna make one for my bf's birthday but i'm just scared it'll turn out burnt on the outside and not really cooked on the inside.

help please...
