This is a super easy candy to make, and it's super decadent, too... very rich and good for the upcoming holidays. People tend to think that if you've made candy, you spent lots of time fiddling with thermometers and double boilers and such, but with this, you don't even have to measure anything precisely.
The ingredients: chocolate chips (dark or semisweet preferred, but you can use milk chocolate if you must :), peanut butter (the crunchier the better), marshmallows (mini or regular size!).
All you do is melt the chips in a nonstick saucepan over very low heat--you want them to be melty and stirrable, but you don't want them to burn. When they're mostly melted (some melty lumps are okay), stir in heaping spoonfuls of peanut butter to taste. Remove from heat about halfway through stirring in said peanut butter, then take a moment or two to let it cool while you clear out space in your freezer for the candy to chill and set. When it's still hot and goopy but not so hot that your marshmallows will insta-melt, you can either add a whole bunch of mini-marshmallows and spoon pats of the goo onto wax paper OR do what I did this time around--stick a regular-size marshmallow on the end of a fork, drag it through the mix, set it on the wax paper and spoon a little more goop on top of it.
If you want some of it to be vegan friendly or you just don't like marshmallows, you can freeze the mixture into bars or discs or use a candy mold or whatever. It's great re-melted or just chipped and served over ice cream, too!
The chocolate mixture is very melty (how many times am I going to use that word?), so be sure to keep the candy frozen or refrigerated prior to serving. I am told that this is also a fun recipe for kids to do or help with (depending upon age and such). So... enjoy!
