For Administrative Assistants Day, my boss took us to the University Club of Nashville for lunch today. They have a buffet and in the middle of the room was a dessert table.

I had a wonderful piece of chocolate cake and of course you know I had to take a pic for this community!

It was HEAVEN!! Dark chocolate frosting and I guess the cake itself was plain chocolate and there was cream cheese in the middle. It was so moist and delicious!

Kells, the legendary Irish pub in Portland, OR, serves a single-layer version of this cake with whipped cream. Be sure to use Guinness or a similar strong beer as light beer won't impart the same flavor.

Well, the moderator Herself commanded I post this here, so here it is - the recipe for a Flourless Chocolate Cake Of Doom you can make and not feel (terribly) guilty about! This is very rich, very moist and wonderfully dense, so eat it slowly!



Ingredients:

2 tbsp trans-fat free margarine or unsalted butter
1 tbsp unsweetened cocoa powder (I used The Dutch Cupboard cocoa powder)
1/2 cup blanched almonds
1/2 cup sugar
3 oz bittersweet chocolate (Go for gold on this item! I used 70% dark Dolfin chocolate.)
1/2 cup fat free sour cream
1/4 cup sugar substitute
2 egg yolks
1 tsp vanilla extract
1/4 tsp almond extract (optional)
5 egg whites, at room temperature
1/4 teaspoon salt
1 tbsp toasted slivered almonds (optional)

Does anyone know how to make the best cookie cake?

I wanna make one for my bf's birthday but i'm just scared it'll turn out burnt on the outside and not really cooked on the inside.

help please...
