YOU HAVE to try these..
I've been jonesin' for some pancakes lately.. To the point that I thought about cheating, then I found this.. Yes, I stole this recipie, BTW :)
BFL friendly "Golden Pancakes"
1 cup of whole oats
6 Egg whites (or just under a cup of Eggbeaters)
1 cup of cottage cheese (I used nonfat)
1/4 teaspoon cinammon (I use a bit more 'cause I like the flavor)
2 packets of sugar substitute (I use Splenda...about 1/2 teaspoon)
1/4 teaspoon vanilla extract (again, I use a bit more because I like the flavor)
I put everything except for the oats in a blender for about a minute. Then I added the oats & went another 45 seconds or so.
Spray a nonstick pan with Pam, cook on medium heat (if you cook 'em too fast, the inside will be gooey and the outside will be crispy...they take me about 5 minutes to cook).
I topped them with a sugar free (although not calorie or carb free) syrup and some canned unsweetened cherries.
The batter is a lot more runny than regular pancake batter, but they turned out fine. THey are also not as fluffy as regular pancakes, but hey, it's a health food, what do you expect?
