Small Cakes for a Union: Round one

 My thesis chair asked me to create cupcakes for her union after not finding  cupcakes at our local San Diego spots that she really loved. This is the first round I gave her a few weeks back as a taste test:

I had 3 egg whites to use up, so I made financiers. They were super easy, so now I know what else I can make with leftover egg whites aside from meringues! Very eggy-tasting when warm, so cooling them down to room temp is a must. I can't remember where exactly I got the recipe from, but here you go: financiers )
 
 
  sponge with lime whipped cream and raspberries

I got bored today, so I made this sponge cake topped with lime whipped cream and raspberries. The sponge cake could definitely have been better because I totally failed at folding in the flour so there were lumps randomly scattered about (hence the lack of naked cake pictures), but the texture wasn't as dense and stomach-punching as the last one, so it's an improvement XD I used the hot milk sponge recipe here for the base, but I guess it's not so much a sponge since it's got butter in it.

The cake got brushed with lime syrup (1/4 cup sugar and water and the juice from half a lime) on both sides. Half the raspberries were macerated with just sugar and the other half with sugar and gin (because what goes better with lime?) I also threw in a tbsp of lime juice into whipped cream to make the lime whipped cream. Sorry for the poor "decorating" as I just cut squares and stacked them up with the other ingredients in my haste to eat it XD

Next time, if I can get the sponge cake to turn out all right, I might attempt to make this as a roulade!

  Cannoli Cake!

As soon as I saw this cake on the wonderful Cream Puffs in Venice blog, I knew that it would be recreated in my kitchen the first time I had a good excuse.  And honestly, it wouldn't have taken much.  Fundraising event?  Oh sure, I'll make a Cannoli Cake.  Your hamster died?  I have just the thing to assuage your grief. All your adult teeth finally came in?  Terrific, I'd love to make a Cannoli Cake for you to test them out on.  Passed your driver's test on the 7th try?  Surely you deserve a Cannoli Cake. 

As it turned out, my Italian grandfather turned 83 yesterday and the family asked me if I could "bring something" to the celebration.  Are you kidding me?  I'll bring something all right....




It did not dissappoint.  The orange zest made it refreshing, the fact that it wasn't frosted made it feel like a lighter cake even though it is rich and delicious.  It'll have a repeat engagement in my home for sure.

Sorry the pictures are dark and unremarkable.  I promise the cake is anything but.

I was bored today and craving coconut so came up with these! Coconut cupcakes, half with raspberry jam in the middle, all with coconutty vanillaey buttercream icing!

Just baked.

It was my 21st birthday last week, I wanted a Marie Antoinette (the fim) inspired cake and this is what I came up with. It tasted pretty awesome.
It's just a victoria sponge, nothing amazing.

Nothing special unfortunately :( but the cake recipe I found for the base is really light, fluffy and delicious.

  Theme: Tiramisu Cupcakes

I had seen this recipe for the tiramisu cupcake before, so I used the theme as an excuse to actually make them. I really do need to learn how to use the pastry bag more effectively, because I alwas wind up having a horrible time when it's time to get the frosting on the cake, but I think they taste and look beautiful.
The cupcake is a little chewy, but it isn't bad. The frosting has the perfect amount of sweetness due to the sweet Marsala wine and I absolutely love them.

  Chocolate cake with white chocolate ganache

This was a standard chocolate sponge recipe which I baked in those funny little pillar tins you can get. I then covered them in melted chocolate with sugar pattern acetate (which you peel off after the chocolate sets), and topped them with white chocolate ganache. They were good!

I made a chocolate sponge cake with butter cream icing in the middle and on top with silver balls. It didn't go as well as i'd had hoped. It did initially but then when I was using my piping bag to do the swirls on top the bag exploded and icing went all over the cake, which is why there is a big blob in the middle and why i've sprinkled icing sugar on top. It didn't turn out too badly though!

There's nothing like baking to procrastinate research to unwind when you're feeling stressed from uni or work! Especially when you're mostly using Nigella's recipes - although I have to admit that I think the chocolate chip biscuits that I grew up with are hard to beat. Sorry about the poor quality cell phone pics!
