To Die For Blueberry Muffins

I got the recipe from AllRecipes.com for To Die for Blueberry Muffins with a whole bunch of blueberries we picked fresh yesterday. Big, juicy ones. I was short a little baking powder so they are very dense and I cut the sugar down a little so they are thick and not terribly sweet and I love them. I heaped the crumb topping on and they got very crunchy. I call it a win. Will make them again when I have the right amount of baking powder.

I had actually planned on making the traditional tandoori chicken (but baking it rather than grilling it). However, the grocery store failed me and I decided instead to alter the recipe I had. Read more about that at my food blog if you're interested. There's also for how I did the rice and potatoes there.

Anyway, the chicken isn't overwhelmingly red, but even moreso in person it's definately tinted red. And though it wasn't the tandoori I wanted, it was yummy nonetheless, with the perfect amount of spiceyness!

  Lemon ginger blackberry muffins

I picked some lovely blackberries (and a few blackcaps, which I promptly ate) from my yard the other day, and I had a bunch of lemons, so I went recipe hunting. I found this one. I had just gotten some crystallized ginger, so I decided to throw that in, too. The result is DELICIOUS!

This morning I got a phone call confirming a place at my new job! it was something I was stressing over, so of course I was excited. So I was craving something to reward myself.

My boyfriend also wanted me to bake some bread. But the thing was, we already had a bunch of bread, but neither of us wanted to eat it... (since it was pretty much stale).

So what does one do with a bunch of stale bread?



God it was delicious!


The blueberries added a divine little tang and some extra flavor, so I didn't even need to put any sort of syrup on it!

I was so happy that we had everything to make this... I've been craving bread pudding for ages! I was a little worried at first, because it was a fairly dense bread, it being a whole-wheat bread and all. but it turned out delicious just the same!

I was also considering baking it in a water bath, because that's how I would usually cook most custards... but it turned out wonderful and moist all around without it!

I love it when I try a recipe for the first time and it comes out amazing.

I'm not sure what about this recipe adapted from Isa Chandra Moskowitz's Veganomicon makes it low fat, but it's so lovely and banana-y that nobody who eats it is going to notice or care!

So, on Wednesday all the girls came into work, whether we were scheduled to or not, to rearrange the furniture on our floor. Merchandise, if you will. And I figured, why not bring in a little treat for all of us. And so I made cinnamon muffins for everyone. I must say, they were delightful. A nice little snack, nothing too overwhelming. They were also deliciously moist. A new favorite of mine, hope you enjoy it too! :)

  Zucchini Bread

When I was an enterprising youth, I made zucchini bread and sold it to all my relatives and parents' friends during the summer. I'm sure I made hundreds of loaves over about three summers. My mom grew tons of zucchini in her garden and I bought all the other ingredients. I'd make six loaves at a time in an assembly line of large bowls. I don't sell zucchini bread any longer, but it's still requested by many of my relatives and I'm happy to oblige.

Not so cute, but these are the moistest muffins ever! We had a bunch of random fruits and vegetables on hand so we threw them together and came up with this recipe. And it totally worked! Experimenting in the kitchen pays off!

The last time I made cinnamon rolls, I took the easy way out, and opted for a biscuit-dough bun, steering far far away from yeast. While they tasted great, the texture certainly didn’t appease my nostalgic side insisting on reminiscing the teenage years of drooling over the fluffy Saint Cinnamon buns.

  Apple Cinnamon Braid

This was SO good - tastes a bit like a cinnamon roll/donut but with apples and less sugar. The recipe (which I took and modified from http://community.livejournal.com/super_supper/62101.html#cutid1) makes two braids of a little longer than a foot each. I brought one to my dad's for Father's day and the three of us finished a whole braid in about 2 hours. Just couldn't put it down! My coworkers got the second one the next day and felt pretty much the same. Every single person loved it!

  Pineapple Blueberry Muffins

Blueberry muffins will forever be my all time favorite muffin to have. I think there isn't any muffin out there better (that's just me). And when it comes to making Blueberry Muffins, I always have fun trying to come up with new, better tasting muffins. I've made some bad ones, and I've made really good one. However, these are defiantly the BEST; Seriously, the BEST blueberry muffins I think I've ever made.

Not only are they healthy for you (and EGGLESS!! For you people out there that go the eggless way), but they are so flavorful! You take your first bite, and you just have to pause for a moment and go; "Oh my god..." That's how I reacted as least. I had a feeling that these would be pretty good, but I wasn't expected to be completely stunned and amazed at the final results! I may be over reacting a bit, but I've fallen in love with these! They were so amazingly good!

Every time I talk to my friend Sam, his side of the conversation goes thus: "moan moan moan whine moan". The last time I chatted to him he was miserable for missing my last party where I baked insane birthday cakes based on the birthday boys' three favourite flavours (as some on this community may remember). To cheer the miserable git up I told him to give me his two favourite flavours and I would make him his own special baked treat.

Sam chose peanut butter and chili. I was pleasently suprised by his choices as I found I could actually make something really really delicious with them rather than the previous oddness.

Ok, seriously.

Is it possible to crave something you've never even HAD BEFORE? AKA A DONUT MUFFIN!? FANTASTIC!!! I honestly haven't had a donut in YEARS because I'm allergic to corn & soy, so most store bought donuts are off limits.

BUT!!!!

Thanks to an amazing post by [info]a_sweet_fantasy I knew I had to have some sort of donut. STAT! Seriously, if I knew you in real life [info]a_sweet_fantasy I'd hug you!!!!
