Please help with apple pastry

Please, does anyone have a tried-and-true apple pastry recipe they can share with me?

My sister requested apple pie for her graduation, and the one I made had an icky crust - dry and flat and unappealing. I want to make her something light and fluffy - possibly a strudel or some other small pastry. Frozen pastry's hard to come by, and expensive. Her graduation's in a week... :( Help?

Thanks for any advice you can give me.

Every fortnight, the main street in our Welsh town is invaded by the local farmer's market, with such treats as local honey, plants, farmed meat like lamb, goat and wild boar crossed pigs, and game.

So when I was browsing one of my wife's cookbooks, Fort Chipewyan Traditional Cookery and came across two different recipes for rabbit pie, I thought I'd pick up a bunny from the market and bake me one!



Sorry the pictures aren't the best - I started preparing the rabbit at around 6pm when I got home from work, and the pie wasn't ready until 11.30pm! Not a recipe for the faint of heart.

  A non-traditional Mississippi Mud Pie

I baked this for a co-worker's last day with us. She loves chocolate, so I decided to go with a Mississippi Mud Pie! But I also know my co-workers and know if I baked the traditional pudding, it'd be left out all day and go bad. :( So, I made a brownie-like pie! It ended up looking a bit like mince meat, but it's quite tasty! :D

Had one hour to spare last afternoon hence I made Quiche (following just_tonight's recipe!) for lunch cuz I was craving for it ^^

Nothing as comforting as a piping hot quiche to satisfy my tummy! Beats store-bought ones any time.. :) Nom nom nom..

  Apple Tart with Caramel Sauce

This tart was so good, we didn't even remember to take a picture of it until my boyfriend was eating the last piece late last night. Hence.. it's also pretty much drowned in the remaining caramel sauce we had left over. And it's also missing a bite of apple underneath the fork. I saw him start to finish the last piece and said "Waaaaaiiit, stop, I need to take a picture!" Aren't I considerate? :) No photo of the whole tart either, sorry. I couldn't wait that long.

It was also a conglomerate of 3 recipes, so I'll post the modified version for you. We got a whole bag full of baking apples for free, thanks to a lovely aunt of a friend of ours. Of course, I made two of these, one for us and one for them!

So this weekend was our SAI chapter's Official Visit, and we had this fun potluck style lunch for everyone. First postie time!

I bake pretty much all the time as it is both part of my schooling (culinary student) and job (pastries & sweets at a bakery) but for some reason I never get around to posting anything I do. So here goes!

Tonight, out of boredom and a need to use up ripe fruit, I made a cobbler with plums, pears, and a peach. Turned out a little runny because of the ripeness of said fruits, but sooooooo good!

  Squash baked goods

My cousin and her husband came over for dinner a week and a half ago and brought me a huge bag of squash from their garden. Then my mom brought me a two huge zucchini (one green and one yellow, not pictured). It was totally the attack of the squash people! Since I've always had such success with zucchini bread, I thought I'd modify the recipe and try my hand at squash bread. (I wish I could think of a better name since that sounds rather unappealing...) I took some to work and a number of my co-workers would only try it reluctantly, but then were shocked that they really liked it. I guess they thought it would actually taste like squash, silly people!

Given my multitude of squash and apples (this time it's Gravensteins from my aunt and uncle), when I found this recipe, it seemed like the perfect thing to try. I made it when my parents were visiting and aunt and uncle came over for dinner.

  quick and easy portuguese egg tart

I've been meaning to make portuguese egg tarts ever since I've heard raving reviews from my friends who are head over heels with them. Unfortunately, I was press for time, and well, truth be told, if there was ever a school for quick and hassle-free baking, I'd be the first to enroll.

And so, judging from what I had in the fridge, I came up with these; portuguese egg tarts made with frozen instant prata. You could easily substitute frozen puff pastry for this, of course, but instant prata was what I had in the fridge.

My husband and I went to my grandparents' house for breakfast Saturday morning. While there, we picked a huge sackful of concord grapes. I planned to bake a pie with them, then decided last minute to try a crisp instead. I thought the crumbly oat topping would go really well with the Welch's grape juice flavor of the grapes. I was so right, this is easily the best thing I've ever baked.

I've been away from this community way too long. I'm going back to school next month, and before the madness starts I've got an urge to do some baking. So I'm coming to you with a couple of recipe requests:
  1. Apple cobbler? I've got a hankering to make something with a filling of apples+brown sugar+cinnamon,only with a biscuity, cobblerlike topping rather than a pastry crust. Would I have to precook the apples to make sure they'd soften up? Apple cake is nice, but I want the apples to be a fruity, sweet/tart, spicy layer separate from the cake rather than in chunks scattered throughout. Please give me your favorite apple recipes.
  2. Dry, but flavorful, cookies/biscuits This was inspired by today's fruitless search at the drugstore downstairs from my office for some cookies to have with tea. I was hoping for Pepperidge Farm Bordeaux cookies, but they didn't have them. All the cookies in stock were full of chocolate chips and/or nuts and/or cream or jam fillings. I came away with some nasty, flavorless animal crackers. What I want is a non-moist cookie, that can fit into my mouth alongside a sip of tea without getting too mushy or gloppy. Dry gingersnaps would be good, or a flavorful butter or sugar cookie.

  San Francisco Silk pie?

Howdy :)

I've been googling my little heart out, but I can't figure out what looks right and what is just wrong and I don't really want to make twenty pies to figure out the recipe, ya know?

So, a restaurant in my hometown used to have this pie called "San Francisco Silk" pie. It was basically a VERY thick chocolate mousse type pie. But it had a chocolate cookie crumb. No whipped cream on top or anything like that, just the super thick pie. I had a friend try it once and they said, "Oh my gawd, this is chocolate frosting pie!".

Well, the restaurant is under new ownership and they don't make the pie anymore because they said they don't know how, never got the recipe. I'm DYING for some!

Any thoughts? I know it had butter and sugar in it, because once, many years ago, they had a new pie maker and they didn't mix up the filling enough, so my piece had little pockets of sugar and butter creamed together amidst the chocolate filling :) It's also not a really dark chocolate, more milk chocolate-ish.

  Apple pie/flakey crust request

So I'm trying to plan this huge dinner for my bf when he gets back home for a bit (he's a truck driver). His weakness is ice cream, so I've been trying to think of something to serve with the ice cream and have figured apple pie would be a good fit. It's fairly healthy and I love doing the lattice top. Does anyone have a good recipe for a light flaky crust? Mine usually turns out too heavy so I'm looking for something lighter. If you have any full apple pie recipes I wouldn't say no to them.  :)  Thanks guys!
