Spiced Oatmeal Raisin Cookies with Applesauce

Both my cousin and my father have developed diabetes in recent years. My cousin seems to be adhering to his diet more than my father, so I hunted around for a yummy recipe to take to the family. (I've been loading them up with baked goods, most of which my cousin can't eat.) The recipe site was linked in the comments to an entry in this community. As I had (almost) all the ingredients for this recipe, I adapted it and I have to say I'm rather pleased. These oatmeal raisin cookies came out wonderfully cakey and, after discovering the wonders of spiced oatmeal raisin cookies, I don't think I'll ever make oatmeal cookies without the spices. Yay! The nutritional information is included with the original recipe, and it may be slightly different since I made a couple substitutions. I hope these fit into my cousin's diet! I made a double batch so I could freeze some for the next time I see my dad, too.

I'm not sure what about this recipe adapted from Isa Chandra Moskowitz's Veganomicon makes it low fat, but it's so lovely and banana-y that nobody who eats it is going to notice or care!

I was a little skeptical about these cookies at first. Really? Lowfat AND fudgy? But they're DELICIOUS. They're very soft. With some frozen coolwhip in the middle they'd make great light whoopie pies.

i actually happened into a theme post!

blueberries were on sale, and i was already trying these low-fat oatmeal cookies out...then i added white chocolate and probably made them not-so-low-fat-anymore. though i do recommend the original recipe (with boring old raisins instead) as a general lowfat recipe.

My boyfriend was in a cheesecake mood, and I was in a Reese's one. With our powers combined (and lots of stuff that are healthy-ish), I bring you... peanut butter and chocolate swirl cheesecake! In crappy cell phone picture quality. ;)

In my adult life, I've never made a proper cake. I just realized this.
Most recipes I find have way too much sugar and butter and can't bring myself to bake them.
Does anyone have any delicious cake recipes that are fairly low fat?
I tend to like chocolate, coconut and lemon things but whatever else will be fine. Thank you!

Dear Wonderful Bakers,
My boyfriend lives across the country :( I send him cookies often, but he's trying to get in shape and cookies are sort of counter-productive. What items could I make that are healthy and won't die a horrible death if I ship them to him? I was considering fruit tarts or something of the sort, but I really think those are too delicate to make it through the mail. Do you have any ideas? Healthy-ish cookie recipes are welcome, too, if you have some that you love.

I made a cake for my PopPop’s (who is a diabetic) birthday dinner tomorrow. I then made myself a little version of the cake because I won’t be there to taste it; it was delicious and I was surprised. (I didn’t bake these from scratch)

  oil and butter-free carrot cupcakes

Recipe taken from here. No butter or oil used, just pineapple, raisins, carrots, and applesauce. It was very moist and super delicious.  I also topped it off with low-fat cream cheese icing, coconut, and gummi bears.  What can I say - I'm addicted to gummi bears. :)

Unfortunately I forgot to line the cups with oil spray, so they got destroyed whenever someone tried to peel the cup off.

my boyfriend is one of those crazy "healthy-eating" types. his birthday was thursday, so instead of birthday cupcakes i made him some birthday muffins. healthy = whole wheat flour, whole grain oats, egg whites *only*, NO butter, NO white sugar, NO oil.

Hey Everyone!  I frequently watch this community (love it), but I've recently done a lot of baking for my flatmates, so I decided to make a post.  First of all, I gotta say that I've been an avid baker most of my life (4-H baking and cake decorating alumni, what what?), but I recently moved to a small student flat in the U.K. to get my master's, so I have the worst kitchen known to man.  Well, maybe not WORST, but you get the picture.  I don't have any mixers, my oven is REALLY bad, and my baking tools consist of two cookie sheets, two cake pans and a whisk.  But I make do with what I have.  Anyway, I made three types of cookies and some pizza dough yesterday!

  Low Fat Brownies?

I'm trying to cut fat as much as I can, but the one thing I'm having a hard time with is brownies. They're my weakness. ;-)

I have one recipe for fat free brownies (using apple sauce in place of the oil) and by the second day, if they last that long, they are literally wet. Not moist, but wet and gooey and it's kind of gross. ;-)

So, I'm asking for help, suggestions. I already know about the 2 ingredient "brownies", but what else is there?
