Good Morning bakebakebakers! I'm going to Reading, PA with my friend and my friend's mom tomorrow to visit my friend's grandmother. I want to bake something... anything... you know, to thank her grandmother for letting us visit. 

Usually I make cake or cupcakes or my 'infamous' Mexican Wedding Cookies. But I have lots and lots and lots of apricots and I want to make cobbler! Does anyone have a recipe for apricot cobbler? or for peach cobbler I guess? I googled 'apricot cobbler' and 'peach cobbler' but I want something tried and true, you know?

In return, this is my 'infamous' Mexican Wedding Cookie recipe.

  A Fan of FLAN!

This is my new favorite thing to make.  Egg Custard Flan from Patricia Quintana’s Mexico’s Feasts of Life.  It is a lot easier to make than some of the more fancier cakes I’ve made, yet people seem just as thrilled, if not more so.  I’m pretty amazed at it myself.  I made it for a belated Dia de los Muertos Party this last weekend, along with two tres leches cakes.  Almost all the compliments were for the flan!  Not that I'm complaining or anything.  Maybe because I've brought tres leches cakes to this party for three years now.

Hi again to all!  Wow, here I am, a lurker for months, then two posts in as many days.  Hope you all are ok with that.  It's pic-heavy, at least, so there's lots of fun schtuff to look at!

So, last night was very long.
I spent about 85% of it in the kitchen, and my legs and back are complaining!  I'll have to toughen up to standing for hours at a time, if I'm going to do this for a living in the future.

Today, I made two chocolate cakes (the first one was not good enough, so I regretfully dumped it in the trash - wah!), raspberry buttercream frosting, a dozen mini cupcakes decorated for a baby shower event this Wednesday (I hope they don't dry out by then!), and two full original cookie recipes for my work's cookie contest tomorrow.

For the chocolate cake, it's a commissioned piece that's to emulate a wedding cake top (i.e. rolled fondant icing), in dark chocolate and raspberry flavour, with white fondant.  I've never done a wedding cake before, so it's been a learning experience.  I hope I don't go insane trying to get the fondant to roll properly for me tomorrow.  I made the raspberry flavouring myself, and it's pretty damn good if I do say so!  It coloured the buttercream icing perfectly, a beautiful pink, which will be going in the two middle layers.  I also "marinated" the three layers with the rest of the raspberry coulis, heated up and watered-down, which I hope will keep them from being dry.  It's wrapped up in the fridge, stabilizing for tomorrow's fondant fun.  I'll post pics later when it's complete.

Thank you, everyone, for your filling suggestions yesterday! I think I'm going to go with one of strawberey, one of chocolate, and one of dulce de leche.

So, on that note, does anyone have a recipe for dulce de leche filling - or at least a recommendation for where I can pick some up?
