Spiced Oatmeal Raisin Cookies with Applesauce

Both my cousin and my father have developed diabetes in recent years. My cousin seems to be adhering to his diet more than my father, so I hunted around for a yummy recipe to take to the family. (I've been loading them up with baked goods, most of which my cousin can't eat.) The recipe site was linked in the comments to an entry in this community. As I had (almost) all the ingredients for this recipe, I adapted it and I have to say I'm rather pleased. These oatmeal raisin cookies came out wonderfully cakey and, after discovering the wonders of spiced oatmeal raisin cookies, I don't think I'll ever make oatmeal cookies without the spices. Yay! The nutritional information is included with the original recipe, and it may be slightly different since I made a couple substitutions. I hope these fit into my cousin's diet! I made a double batch so I could freeze some for the next time I see my dad, too.

  Almond Flour
20 June 2008, 09:25 am

Hello all!

I checked the tags and history and didn't see anything, so hopefully this isn't old meme.

I'm looking for people's favorite almond flour recipes. I'd prefer something with little or no sugar, and I'd also like to avoid anything with artificial sweeteners (I get a skin reaction).

BUT I'll take anything you've got, so if you have a recipe you love that doesn't meet those criteria, please share anyway. Thanks!

Hi! This is my first entry here! :) As you all know, Fathers' Day is coming in like a week's time. I'm thinking of baking something for my Dad, but I have a problem. My dad's a vegan and he has diabetes. Does any of you have any vegan recipes that contains a very minimal amount of sugar or even best, no sugar at all?

I know this is really hard to find.. But I really want to bake something for my Dad! He has been wanting to eat the stuff I've baked, but he can't since all those baked goodies contains loads of sugar. :(

Thank you for the help!! :)

Wheat-free, lactose-free, no sugar added cake recipes
06 May 2008, 06:33 pm

I'm in charge of making a cake for Mother's Day and I want to make something that everyone can enjoy, including my sister's partner who doesn't eat processed sugar, wheat, or lactose. So please give me your tried and true recipes for cakes with no added sugar (fruit juice and agave nectar are okay) and preferably also free of wheat and lactose (these are slightly less important since I can easily substitute other ingredients such as rice flour).

Bonus points for using ripe bananas and/or strawberries!

TIA!!

Weight Watcher Chocolate Cupcakes With Sugar-free Frosting
27 April 2008, 04:20 am

I made a cake for my PopPop’s (who is a diabetic) birthday dinner tomorrow. I then made myself a little version of the cake because I won’t be there to taste it; it was delicious and I was surprised. (I didn’t bake these from scratch)

Awkward request! Something egg, yeast, dairy and sugar free?
04 April 2008, 08:23 pm

I want to make something for my husbands parents, but his dad is diebetic(sp?) so can't have sugar(I'm sure he can have that fake stuff though?) and his mum can't have dairy, or yeast, or egg, and I think there's something else she can't have, but I can't remember it!

Sooo I was wondering, is there anything I could make that doesn't have any of that stuff in, but is still yummy, and err is quite easy to make?
Something chocolaty would be nice!

Thanks in advance for any help. :)

Does anybody have a cupcake recipe that uses stevia instead of sugar? Can I just substitute it for sugar? My bf can't have sugar, but he sure can have stevia!

  Sugar-free/low-fat carrot cake
27 November 2007, 05:37 pm

I have lurked this community forever, but this is my first post! Sorry to start off with a recipe request, but this is one is a little too complicated for me:
My good friend had a gastric bypass about a year ago and now does not eat anything with sugar, and only low-fat or fat free. Her birthday is coming up and I know that she loves carrot cake, but can't eat it now. Does anyone have a recipe for a good sugar-free carrot cake that is also low-fat? If not both, then just sugar-free!
Thanks so much!

Holy Grail of Guilt-Free, Diabetic-Friendly Chocolate Cookies

mood: accomplished

I've been trying out the recipe posted by Superwife for awesome chocolate chip cookies, and had great success with straight-up chocolate chip/vanilla pudding. My dad is diabetic though, so I tweaked the recipe a bit so he could eat them without worrying, and a little bit because I didn't have two eggs. My results were delicious! Recipe tweaks under the cut.

  Healthy Banana Cookies

Banana Cookies

Found a recipe for a healthy banana cookie. No sugar, no flour, no eggs! Texture turned out softer than I expected, and resembled a small bite sized banana cake instead. But very yummy nonetheless.

Recipe here.

  Help! Pulease!
17 August 2006, 10:47 am

first...I need a recipe for some chocolate cupcakes...something that uses cocoa powder. It's for a friend's b-day.

Also, I just got braces, and my orthodontist told me to cut down on sugar (I don't eat that much anyway) And I would really like to cut sugar out if at all possible (NOT ON THE RECIPE I ASKED FOR ABOVE) but just on cakes for myself. So if anyone has recipes for cakes that are sweet but w/o sugar and are really soft and moist that would be oh so much appreciated.

I love baking..and eating my creations so I would like to still be able to bake quite a bit, just w/o the sugar. I'm willing to try just about anything!

thanks!

  A weekend of baking

I made a fair few things this weekend. Some of the baking was called for, some was just the product of my sad addiction.

I thought it would be nice to share some of my favorite recipes for diabetics with you all. Thanks to the lovely folks at Splenda and their fine products it's now easier than ever to bake for diabetics. And, since both my partner and my father are diabetics, I have a box full of recipes. Here are photos and recipes of my three my favorite baked dessserts...

  Baking with Splenda

mood: bouncy

I bought some Splenda and modified my favorite cheesecake recipe to incorporate it. I unfortunately do not have any pictures online at the moment but I thought I'd share the recipe. I haven't yet tried a full piece, but the crumbs were great! I've been baking for everyone at one but one of my staff can't enjoy any of my regular baking because she has Type 1 diabetes. I baked this specially for her.

  Diabetic Friendly Recipes??
24 April 2006, 12:23 pm

I'm having a diabetic friend over for dinner next weekend and I'd love to bake something nice for dessert. The sticking point, though, is that I HATE the flavor that Splenda leaves in baked goods. I've tried it, really I have. In many things. It's so hard to get away from.

Any suggestions for low or no-sugar desserts that don't use Splenda???
