Hi all! It's been a while since I've posted around these parts, but I saw this recipe and just KNEW it had to be tried!!!

So I give you...

Layered Mocha Cheesecake!!!

Okay, so now I'm left with a question. As the recipe says, you bake it for 50 minutes. Mine was still ridiculously wibbly wobbly at that time, so (following the advice on the taste of home site) I baked it another 20 minutes. It was still very wibbly wobbly after I took it out, but I just went with it. Sadly, my top layer did not turn out so well on the inside! Towards the center, it was very soft, and it was basically impossible to do a clean, nice cut on the cake. How can I avoid this, without totally overbaking my cake??

  Coffee cake recipe?

Hi guys,

I want to make a really lovely strong coffee cake, as in a coffee flavoured sponge with coffee buttercream icing. The usual convention is coffee and walnut but I don't like walnuts so basically just want that recipe without the walnuts. I don't want a mocha cake, or tiramisu or anything, just a very moist rich coffee sponge. I've checked back on the tags but there isn't one there.

Does anyone have a tried and tested recipe for gorgeous rich moist coffee sponge cake? I promise I'll post photos when I bake it :)

Organic beetroot chocolate fudge cake

I decided to make a cake for my friend's birthday as something we could eat before (and after) going out tonight. My first attempt and it came out pretty well :)

N.B: I'm really interested in getting started with vegan cooking, could someone recommend / advise how I could veganise this cake, e.g what would I use instead of the eggs and honey and how would this alter the cake's taste/texture etc?

I knew I had to try it
the recipe if from Dorie Greenspan's "Baking from my home to yours"
I have the book and didn't even know the recipe was in there.

It has two layers of yellow cake, soaked with espresso syrup
a layer of marscapone cream goes in between the layers
along with a layer of finely chopped chocolate
the filling is enhanced with espresso extract and used to frost the cake
A dusting of cocoa powder and some chocolate covered espresso beans
finishes off the presentation.
this cake needs at least 3 hours to sit in the fridge
I doubled the espresso syrup to soak the layers and did not use all the syrup
my cakes were done in 24 minutes so watch carefully

My oldest sister had major brain surgery to remove a tumor about two weeks ago. She's come out perfect and better than before, so the whole family is rejoicing. And my way of rejoicing and lending a hand while she recovers was to bake a cake.

This is my go-to cake and has been for five years. I've even modified it from chocolate to vanilla before. It's easily the best chocolate cake I've ever eaten, and I used to work at a really good bakery, so I think that's saying something!

The cupcakes were a bit sweet but addictive and the cookies went over extremely well. I'm glad the did - they were incredibly labor intensive and took nearly four hours from start to finish!! Oh yes, I substituted baking Splenda for sugar where I could, with great results!

If you decide to make them, I hope they come out just as great!

A cake by request I made earlier this week for a birthday. I didn't really know if all the components were going to work, seeing how I made up the recipes on the fly. Luckily it turned out pretty good.

Coffee is most defiantly an addiction of mine. I absolutely love coffee. Anything coffee, I'll have. Baking with coffee, well, its something I love to bake with. From muffins to cupcakes to cookies to pastries. I love it. Muffins are my norm for coffee, but, I really wanted to have a cupcake to do. And what better than to have coffee and chocolate in the little package of a cupcake?

These cupcakes are very moist and super rich that it'll have coffee fanatics like myself jumping with joy. The Kahlua Frosting was fantastic with these cupcakes. I got the recipe from a friend of mine whom loves cupcakes and loves making homemade frosting. She's totally against store bought frosting (as am I), and when I told her that I was making Mocha Cupcakes, she said that this would be perfect with them. And they were! They were to die for!

Theres been a blogging group that I've really been wanting to join for awhile now. Tuesdays with Dorie. You have to have a book to join this group, and I didn't have the book; Till now. I finally got the book so that I could finally join the group, and I didn't hesitate to join.

It was actually kind of funny. Before I saw what the next challenge was, I looked threw the book to see what all recipes there was. And one of them that really shout out to me was the Peanut Butter Torte. It was just beautiful, and sounded, as well as looked, unbelievable. I knew that I wanted to make it soon; And who knew that'd it'd be one of the first things that'd I'd bake!

This weeks challenge was the Peanut Butter Torte. I knew that I was going to love this because, I mean, come on. It's peanut butter! One of those things that make you happy and certainly bring bake being a kid.

I really liked the crust for this. An Oreo crust is my favorite kind of crust to have on an cake, cheesecake, or anything else that has a crust. I was kind of unsure as to if it'd pair will with the peanut butter. I didn't really think that'd be that good together. But they were! They were excellent together! And I defiantly have gotten my peanut butter dose!

I'm obsessive about nutty sweets and have hit on a new favourite - these hazelnut and espresso cookies. Fairly time-consuming to make, they're well worth the effort and can be stored in an airtight container for a month. That is, if you can get them to last that long!

I was really thrilled to see that the new theme is coffee! Caramel is my fave thing ever, and it pairs so nicely with coffee/espresso! Again, I made this for my mother-in-law but, I snuck a piece so I could tell her how yummy it is! lol


I just copy/paste the recipe from the site that I got it. I also forgot to take a picture (which is a shame because I decorated the cake so cute! minus my piece of course lol, but I dolled that up as well =0/ darnit!) so I took it directly from the site.

mine came out much cuter than the picture!
