I have James McNair's corn cookbook and in the back it had a recipe for cornmeal biscotti. I still have the book but ... the last 10 pages are missing, including this recipe. I always make it for the holidays - and it works great as a wheat free cookie with little modification.

Does anyone have the cookbook and can transcribe the recipe for me?

I have been looking all over for an amazing layered cookie recipe that I found last Christmas. The cookies were chocolate, vanilla and cherry layered dough. The vanilla layer was mixed with nonpareils. I remember having to refrigerate the dough before slicing and baking them.

They tasted amazing and I would love to make them again this year.

This may be a shot in the dark, but I am wanting to send a few of my friends who live in different states/Canada something baked for christmas. I don't even know if this is possible, but I am open to any and every idea someone could give me. Even if the idea is just like: oh cookies ship well, that would be so super helpful because I am so confused as to what would ship well and have a possibility of arriving in one piece. If you have a favorite recipe or something that ships well, I'd appreciate that also.

Also, question number two, would Petit Fours ship well at all? I'm thinking not so much seeing as it is a cake and the time in the box would leave room for soggy cake upon arrival. Just wondering if anyone has ever shipped them with good results.

Last year whilst trying to avoid eating a Phillipa's mince pie every single day I worked in Armadale pre-christmas (best overpriced bakeries and cafes, dangerous, dangeous place to work) I stumbled across their cranberry shortbread and fell in love. I'm planning on making little bags of them as christmas gifts this year so I did a test run with this recipe and I think I'm in love. Next time I'll chill the dough and roll it so I can cut some simple christmas shapes but otherwise it was perfect - the melt in your mouth shortbread was really lifted by the chewy cranberry pieces - plus it makes them look pretty!

Does anyone know of a recipe for fondant that doesn't attempt to devour you?
My last attempt was a marshmallow based fondant, and while I'm not sure what went wrong, both my friend and I were nearly devoured by it.
Any tips/ ideas or what have you would be much appreciated. ^^

So I know this is a weird picture. I took it out of the magazine from which I got the recipe. But I promise I really did make it, and it was really easy and, possibly, the very best chocolate pie I have ever tasted in my life. I just forgot to photograph it before it was devoured.

I have been on a pretty strict diet since June. I've lost 60 pounds, but haven't baked much. I don't really eat sweets at all now because I avoid all the fake sugar. In order to eat healthy and sustainable, I have been limited. So at Thanksgiving, I wanted to make something that was healthy, and low(ish) in sugar, but also decadent and yummy. When I found this recipe in the November issue of Health magazine, I had to try it.

I thought I'd share this experience since, in a time when everyone is concerned about saving energy (either to save the planet or to save money) this is a rather brilliant way to cook a turkey.

Usually we don't have turkey in my house for Thanksgiving because it's just a huge pain in the butt. Why eat a turkey that will take hours to cook when we can pop a roast in and be done in an hour? This year, though, Mom was reading M.S. Living which had an article about cooking a Spatchcocked (butterflied) Turkey. So we thought... 70 minutes, really? Let's try it!

The turkey was the last thing to go into the oven and it came out perfectly about an hour later. No need to cover it or worry the skin will burn. It was still very moist.

After a twee bit of help from the mods re: fondant coloring, I managed to do my first batch of fondant and make a cake for some friends. Sadly, it is just a plain old box mix as it's thanksgiving I got loads of other stuff that I gotta make like prime rib, but, 4 hours later after dying the darn stuff, and then putting it on, re-putting it on, twitching, and grumping at the flecks of icing sugar that I //just// can't seem to get out, I finished it.

Mind you I'm told the flecks of icing sugar make it look like stars so, that's not too bad I suppose. Yes, it's terribly made, but it's my first time, and I can only get better from here on in. I present....

So I made this blueberry pie... and I was transferring it from the oven to the broiler below, (to brown it on the top a bit more)... and it FELL.

I sat in the middle of the kitchen floor, and when my boyfriend came home, he helped scrape me and the pie off the floor, and encouraged me to try again.

Hi Bakers! This is my first post here. Sorry to make it a request post... Here's my dilemma: My husband came home with a pint each of whipping/heavy cream, and 1/2 and 1/2, not knowing that we have a little over 1/2 a pint of each already. Plus we have 1/2 a gallon of skim milk, and 1/4 a gallon of whole milk. It's just the 2 of us, so we won't go through all of this in our normal sauces and coffee before it goes bad. 1 pint of the cream will be used tomorrow for whipped cream on a pumpkin pie, but that still leaves the 1/2 & 1/2, milk, and half of a pint of heavy cream. I also have a couple cans of condensed milk. I need recipes that are heavy in dairy!!! Help me, PLEASE!!!

Other ingredients I have at hand:
Nearly any baking staple (including various chocolates)
1 Banana Squash (simular to pumpkin in flavor, but richer and sweeter)
1 small sugar pumpkin
2 pounds Cranberries
3 bananas
Fresh ginger root

A pretty long while ago I recommended a recipe for matcha/green tea cookies to a friend, and since then the both of us seem to have misplaced the recipe!!

I've tried going back and looking in the tags, but I just can't seem to find it. I believe they were a soft cookie, and they were quite simple and quick. If anyone remembers it, or if you have a favorite of your own, please please help a girl out??

Okay, not a great picture but I didn't want to grab the actual camera.
cooked to perfection! 8 in first batch. 8 in second. about 4 left to do. not quite 5 dozen promised lol
Nothing special, just regular chocolate chip cookies, using the Nestle Tollhouse recipe. I did use a combo of white and milk chocolate chips, and french vanilla extract instead of plain extract. They taste good!!
