Brined Turkey Recipe
Boil for three minutes:
8 cups unsweetened apple cider or juice
2/3 cup kosher salt
2/3 cup sugar
6 quarter-size slices unpeeled fresh ginger root
2 bay leaves
6 whole cloves
1 teaspoon black peppercorns, crushed
2 teaspoons whole allspice berries, crushed
Add and let cool:
4 cups ice-cold water
Rinse the bird, and stick inside it:
2 oranges, quartered
Stick it in two "plastic oven bags".
Pour the cooled brine stuff over it, and top up with two cups of cold
water. Seal it and let it sit in the fridge overnight. Turn it over
once in a while.
When ready to roast it, shake off the spices and rub it with melted
butter.
