Advice on Gardening
Maybe I should go to a gardening community for this, but I'm sure someone has some advice.

I am having some insect problems in my garden. I don't know what insects they are because I never, ever see them. I do have quite a few ants in my yard though. Whatever it is, it's eating my pepper plants ever so slightly, but having a field day on my eggplant. Nothing else seems to be eaten up. Any ideas on what it is or an organic spray I could use to get rid of them? I have a fairly large collection of essential oils, but I can't find much info on uses as an insect repellent.

You probably should go to a gardening community. You might also do a search on soap and/or red pepper solutions to spray on plants.

Flea beetles most likely. Some species of them really enjoy eggplant, and I have had problems with them before. The garden's alive site has some products that will control them (Bull's Eye worked for me).

Diluted solution of soap and water (VERY diluted). Spray the plants down with that, lightly.

And look on the underside of the leaves for insects or eggs.

Aphids? Aphids will eat both of those. There's not much natural stuff that'll kill those. But, if you can find some spiders, and release them into your garden, the spiders will eat the aphids (or for that matter any other "bad" bugs).

my neighbor uses a combination tea of red pepper and coffee... not really sure why it works but she swears it does.

Oh, man! You gotta get on that right away. My eggplants were completely decimated by flea beetles last year :( Like everyone said, soap+red pepper solutions are pretty popular.
