New community for Gluten-Free Low-Carb / Low-Glycemic eaters

Posting this here since I eat an anti-inflammatory diet and will be posting anti-inflam recipes as much as possible in this new community.

If you are gluten-free and you watch your sugar intake, try to eat only whole grains and/or are interested in eating low on the glycemic index... Come join us in this new community:

gflowcarb

I'm hoping this will be a helpful resource for exchanging recipes that aren't full of all the usual highly-processed and nutritionally empty ingredients that tend to be pervasive in gluten-free cooking, and to provide support and information for people who are gluten-free and doing South Beach Diet, the low glycemic index diet, anti-inflammatory diet, and other approaches to healthy gluten-free eating. This may also be helpful to diabetics and folks with PCOS who are trying to eat a blood-sugar stabilizing diet. You don't have to be interested in weight loss to join, just in eating healthier and avoiding or reducing your consumption of processed, sugary foods.

Fibro and exercise

Anyone have any tips on how to exercise despite feeling in pain and tired? I've been using principles from the Perricone anti-inflammation diet, which has helped a lot.... but I want to add more exercise into my life. On top of having fibro, I also have inflammation of the fasciitis in the feet which prevent me from running or walking for long periods. (Doc has recommended sitting exercises as a result). I've gained so much weight in the past year and have lost significant muscle. Perricone allowed me to lose 15 since last month... but I miss exercising! Any tips?

X-Posted

GOOD NEWS AND BAD NEWS

the GOOD is that i DO NOT have lupus!!!! that is so a weight off my shoulders...
BAD NEWS: i have osteoporosis and a slightly large spleen.

i was wondering why when i showed up for my appointment, i had some scan done and besides my sonogram. it was a bone scan. i am way below what i should be on the scale. he DX me with the osteoporosis, wants me to start a daily intake of at least 100 grams of cheese, plus calicum and he put me on vigantoletten 1000 i.e.
my spleen is slightly large, but currently nothing to worry about. it is actually longer than normal.

he recommends me staying on my current meds for FIBRO, but just added the new dx of osteoporosis.

so no autoimmune disorders going on- yeah for me....but tons of bone issues...sucks for me. i did find out the my left hip is pretty bad. which i think explains alot.

so all my other problems are related to my FIBRO- NOT autoimmune. this makes me happy. i know it sounds strange but when you have a mother that suffers from 2 autoimmune disorders...it is music to the ears.

puffy eyed...

Since last week, my eyes were getting bothered by... pollen perhaps? Environmental contaminants? Food?

I happened to have my Holistic Practitioner appointment on Tuesday, Vega testing also indicated dust and dustmites were a particular bother right now. Candida is just starting up too. Vega test says avoid beans & legumes for now. (Darn! I like my beaners!) No dairy, wheat, coffee, alcohol, or chocolate either. No sugar. (I like to think I've followed this diet, but reality is I 'cheat' probably daily on the sugar and dairy... Mussst s-t-o-P) Oh well, that stills leaves lots of fruit and veg and rice stuff to eat...
I got some dirt in my eye on tuesday evening, planting bulbs, and I suspect there was fertilizer or something in it, my eye was nearly swollen shut when I woke in the morning. The other was just red and puffy. :(

Things I am taking to quell the histamine onslaught: Quercetin bioflavinoids, 'Breathe Easy' Tea, by Traditional Medicinals,
Acidophilus & Bifidus capsules, Zyflamend (a herbal antiinflammatory combo).
I am going to go purchase some Nettle tea. Has anyone tried this out? My practitioner says you have to drink it daily, it takes about 3 weeks before it starts working. I Vega tested well for the sample she had, so that's good...we'll see what happens.

I think I have to make my dog stay outside for awhile?
Put j-clothes over the dust registers, change the air filter...
drink tea...tea...tea...

hello,

i have some confusion on nightshades, because the lists on different sites don't match up. some say blueberries, others say peppers (which would be sad, considering the latter helps with my arthritis).

any clues as to what to look for in a particular food, so's i'm not bound by eternal wonder? thanks in advance for your 2 cents.

questioning doctors in germany- warning foul language ahead

dr. feil is the only doctor i have ever trusted here in germany on the german side of things...
today seeing the quack i saw today, knowing that what test he was going to run were going to be on the "normal side of the house" told me it was in my head and thought i needed to see a psych. WTF??
so basically i pointed out to him--UH think i have problems because i deal with pain..NO SHIT. but you know what the problem is...it is in BLACK AND WHITE on a MRI and in a report---instead of FIXING SAID FUCKING PROBLEM...LETS 'TALK' ABOUT IT---WTF--HOLY FUCKING MOTHER OF GOD-WTF???
so said doctor got a piece of my mind--bitch petrol was out today, and i was HEAD BITCH. seriously i think the reason why patients here in germany have to go see a shrink is because they dont question the doctors.
'uhhhh okay, uuuuhhh what's up doc'

i mean i told him, you see the problem but instead of fixing it NOW- let's make it what until it is worse and then....will fix it. HELLO I DONT WANT SPINAL FUSION IN THE NEAR FUTURE. fix it while it can still be fixed. why wait until the problem gets to a point where i am more disabled than i am. oh and my bobble head, do you think--which i made a comment to him about--that IT COULD BE MY MUSCLES FREAKING OUT--because i am IN PAIN????UMM NO?? MAYBE?? GET A CLUE!! oh yeah, i forgot...it is all in my head...waaa poor little fucking me...go fuck yourself doc.

oh i did make the comment about how i was this nice rescue diver..firefighter at one time...you know i can deal with FM pain, but this pain that i am currently having which is FAR DIFFERENT than the FM- and yes, doc i do know the DIFFERENCE in the pain...do you think i enjoy taking XYZ MEDS everyday. do you think i LOVE THE CHEMICALS running thru my vens...oh yeah baby...fuck me please

YEAH, i am a pissy little bitch today, but in good news i am getting out of germany for a day tomorrow. that makes me happy for the moment.

Introduction

Hi everyone - I've just come across this community and I'm really interested! Here's some stuff about why:

I've been diagnosed with lactose intolerance and citric acid intolerance this year, and have had IBS for some time. I also have an ongoing problem with tendonitis in my ankles, and have had eczema since I was a kid. I've had some good results from changing my diet after the intolerances cropped up, and I'm always interested to find out more about potentially good things to change. I'm especially interested just now since my partner has a worrying and as-yet undiagnosed fatigue problem (as well as a couple of long-standing allergies and some weird recurring stomach trouble); at the moment we're trying to keep food diaries to see if there's any obvious link between what he eats and how his fatigue is, since it comes and goes in a really disconcerting way.

For myself, I noticed after the intolerances were finally diagnosed that a diet much lower in dairy produce helped my eczema, so I'm sticking with that - I slipped a bit over Christmas and ate too much goats' milk stuff, so I'm paying for that in itchiness even though my intolerance didn't get set off, but I'm back on track now - and I've also found that adjusting the amount of fibre I eat, and substituting additive-free food for processed stuff, has really helped the IBS. I've recently realised that I probably need to drastically up my intake of omega 3s since I went from January to June of 06 before my intolerances were diagnosed and had a really poor diet during that time. My tendonitis really flared up over the summer and I'm hoping that redressing the balance of vitamins and nutrients in general, and focusing on those that have anti-inflammatory properties, will help calm it down.

Hoping to get to know y'all and find out some interesting stuff too!

Pre-made Meal Plans?

Ok, does anyone have a link to a good pre-made anti-inflammatory diet meal plans?

I'm essentially going to try to balance hormones, mood and inflammation through diet changes. Those are my main goals.

I'm trying to look at foods that help in each area, but it's getting confusing. I may end up just asking a nutritionist in the new year.

Hi. I have an inflammatory condition that's as of yet undiagnosed. Doctors have told me based on bloodwork that something is inflammed and it responds to NSAIDs. I also have a small host of other inflammation-related issues such as asthma (thankfully very mild now in my adulthood), allergies, rosacea and scalp problems (psoriasis). At any rate, it seems I'm rapidly turning into one big irritation. I don't want this to progress further.

It's been three years dealing with this undiagnosed condition off an on and I think it's time to give my diet another overhaul. I've cut out foods before thinking that I might be allergic to something, but now I think I have to make more permanent changes to diet.

So here I am.

so yesterday was my appointment for the doctor that is local. he is internal medicine- however works with fibro peeps. i see him in 2 weeks nothing much was done yesterday except basically a meet and greet.
today was RA appointment in the famous lanstuhl hospital. the doctor there was so awesome. he asked a ton of questions and did an exam- even looking in my hair for the past rash i had. he changed one of my meds. and said that the other doctor can change my sleeping meds for me. he actually listened. i did notice when he was going throu my blood work online that there was an ANA test that was positive, but it look like part of a 2 part test. i forgot to ask him about it and forgot to ask about hospital grade egg crate for my bed also. he thinks i should go back on my hormones. weight issues are a problem. did not realized i had basically gained 20+ pounds since last year. that is not good. so he wants me to make an appointment with nuro and cardio folks to get my clear, since the GPs will not give me my hormones back since they hear 2 TIAs and flip, then hear ASD repair and roll over dead. i am also suppose to go in EVERYTIME i have a major flare, especially with the whole mouth ulcers and rash on the head and get treatment- which he wants a full panel work up and endocrinology work up. my last thyroid check was 3 years ago, however he did not want to run one until i was in flare and something about if they give me my hormones back. i was confused on that one. he poked and proded me so sore. especially my back- he hit one point that basically sent me to the moon. guess i am suppose to use my cane more often if i am having a flare. on the lupus front i did not ask much questions since he was speaking about making sure they do blood work on me during a major flare. i am sure that is because a) that is when i have more lupus like problems b) maybe the blood work will show something. i do know from some last blood work that i had done that i was high in some areas- could not see exactly what they were. i know in 2 weeks they are going to check my blood in my urine again since i still had some, but it appeared to be lower- so no cath unless i show up with more blood in my urine. i was also told i NEED to sleep more. sleep i guess is my best defence. oh joy! so not a whole lot of changes. but more care. i actually have a doctor to go to on a basics instead of trying all the time to get into GP. basically i am not receiving enough care from the GPs or i get into them in not enough time, which is the bigger issue. i think i am having fear that i would not be able to be seen in a major flare up- but since i have this new doctor i am hoping. all i know is the great wise lanstuhl full bird told me----YOU NEED CARE WHEN YOU ARE HAVING A FLARE UP...okay i get it.
so in the next couple of weeks i have to make more appointments to lanstuhl for the cardio docs. however i am going to see if my doc local can talk to the docs up at lanstuhl- since after all lanstuhl did my last TEE. damn which reminds me i need to make a mammogram appointment.
oh i was given a 10page document to read about fibro. since i am stubborn at times and still want to call it a garbage DX.
so that is the news for now on the health front.

hello everyone,

i am new here, so i just thought i'd introduce myself. I am just starting to learn about this diet. i am really interested & look forward to checking out some of the links everyone here has recommended. I am hoping this diet will help me with my Irritable Bowel Syndrome (Which, I am not even sure that's exactly what I have, diagnosis is a little sketchy) and my bladder & back problems. Overall, I am just trying out things to try to make myself overall more healthy.

I am a vegetarian, so I am hoping that finding food won't be too hard. So any tips for a newbie in this?

on years of being a prep cook

continuing my thoughts from my last post, i find that doing a good amount of prep work on my good day (which is usually my second day off in a row, sunday) will make it easier for me to cook during the week. i used to work in restaurants as a cook all throughout college. when you eat out your "made from scratch meal" is made from a bunch of "prepped" or pre-chopped/washed/portioned/ground meat and veg that have heat applied to them and then are dressed with a sauce or a broth or an oil and spice mix. it's all about having the basics on hand all the time.

i know one of y'all posted about having cooked sweet potatoes on hand all the time. this is a great idea. baby carrots are great too.

here's something i threw together after an early evening trot over to the caribbean market. you should be able to get most ingredients at a normal supermarket. the palm oil you might buy online if you are rural.

you need:

2 quarts broth
a turkey leg or wing or two, cut into pieces if possible.
a few T of palm oil (rich in betacarotene and full of omega-3s and-6s)
a purple onion, sliced thin
2 inch finger of ginger, pounded into a paste or finely chopped
4-5 fat cloves of garlic, pounded or mashed with fork to a paste
pinch allspice
pinch thyme
pinch cumin
pinch coriander
one cup mashed sweet potato
one can garbanzos, rinsed and drained
a few medium hot dried chiles, such as ancho or guajillo
one bunch finely sliced, well washed greens (destem, then roll into a cigar shaped bunch, then slice very thin. submerge in water in a large container, soak a few minutes remove from water, shake dry, and repeat with new water. you can add a drop of all natural detergent to the first rinse water if you are concerned about e coli, just make sure to rinse extra well.)
a few tsp good tamari (wheat-free japanese soy sauce) or sea salt

one cup coconut milk or whole milk yogurt(at room tempurature)

brown the turkey legs in the palm oil, then deglaze the pot with a cup of water (pour in and scrape up the brown bits). add in the onions and stir til soft and browning. add the garlic and ginger and the spices and stir a minute or two, then add the beans, the rest of the broth, and the sweet potato and boil until the beans are tender and the meat is cooked through (165-170 F depending on your school of thought).

pull out the turkey and stick it in the freezer to cool. go on and throw the greens in and let them cook til tender. when the turkey is cool enough pull it off the bone, throw it in the soup and save the bones.

if you are using coco milk, add it in and return to a simmer.

if yogurt, just stir it in.

season with tons of black pepper.

mmm.

how to make yummy stock

I look forward to the cooler months because I can resume what I am coming to call the "No Fat-American Diet." this is opposed to the no-fat american diet, which i assume would be tasteless and drab- cottage cheese, lettuce, skim milk, steamed white fish. gross.

no I'm talking about the spicy brothy stock-based foods that contain numerous amounts of EFAs and Omega-3s and warming spices for my poor dragon-infested belly. it never ceases to amaze me that i can eat something that is glowing with powdered chiles and black pepper and feel drastically better and yet a bowl of raisin bran and milk can send me crying to sit on the toilet a few hours later.

i tend to always have my freezer full of onion and carrot ends as well as various bones. i dont know who all is a vegan, but eating fish and meat that are preapred well helped me so much that i could never go without it again. 6 years is plenty.

anyway, i usually buy beef, pork or chicken or turkey on the bone and cut it off for stir fry. when i have enough bones saved up, i make broth. ideally i only have to make broth once a week. broth is basically made from connective tissue which has some decent health benefits, and then i tend to load whatever i make it with up with garlic and ginger and chiles.

ok, get your bones out of the freezer and place them into a pre-heated stock pot with a few table, over medium flame.
let them get nice and brown on each side,
then pour in a cup of water and try to dissolve all the brown bits stuck to the bottom. this will give you a nice brown color.

then dump in a whole chopped onion (skin and all), a few chopped up carrots, celery if you like it. corn cobs are wonderful and make the broth sweet and milky., so are green bean trimmings, cauliflower or broccoli stems, the peelings from a well-scrubbed hard squash or root veg. pull apart a whole head of garlic and throw it in, squashing the bigger cloves first with a big spoon or the flat of a knife.

two or three bayleaves. fresh thyme if you can find it or afford it.
curry leaves (neem) can be lovely, as can lemongrass and kaffir lime leaves, esp with chicken or turkey leaves.

let it simmer for a few hours.

strain it and pour it into a big pitcher for storage. let it cool before you refrigerate it, so you dont raise the temperature of your fridge enough to let bacteria grow.

all the fat will float to the top and them you can scoop it off and throw it out.

stir very briskly.
get

it's pretty easy

http://www.americanpalmoil.com/faq.html#7

If you needed another excuse to put olive oil on everything...

Here it is:

http://news.bbc.co.uk/2/hi/health/4777607.stm?ls

A nutrient's relationship with water and oil can also alter bioavailability.

Mr Faulks said: "To absorb fat-soluble nutrients, you have to get them out of the cellular structure, and then they have to be transferred into lipophilic - or fat-loving - carriers in the gut to be absorbed."

Lutein is one such nutrient. Present in spinach and other green vegetables such as kale, broccoli and peas, some evidence suggests it can protect or slow age-related macular degeneration, a leading cause of blindness.

"Lutein is actually absorbed more efficiently if it is eaten with a little bit of fat, the oil helps it to hop onto to the fatty acids in the gut and to be absorbed," said Dr Steer.

health update- crossposted

well the ana titers came back negative. so still not define DX of lupus.
i do have lupus like problems, now since my hair is falling out among the mouth issues and more. i have never had the "butterfly rash" however have had face rashes, arm rashes and leg rashes. they want to re-eval the ana titers in 6 months. they are also sending me back to the pain doctor since my normal pain level is a 5/6 even with my meds. unless i up them they way they were. if i do that can not function. they have a doc from the states here for 90days i guess he is a specialist too. so the major i saw today is going to give him a call. they did place me on predizone (sp) for 20 days! oh joy weight gain!!! basically was told my fibro is getting worse. my body hates me.
they also gave me a handicap profile. re-eval in 6 months- so i now have handicap stickers on my auto. i still have to bring in my register to the hospital for my SMART. well at least one auto is done.
i know my major problem is that i do not listen to my body. i push and pull myself until i drop. i hate the fact that my body hates me. everything is an effort and i hide it. cleaning house, going out with friends, basically anything. i literally have to lay down for awhile after everyday things. life sucks but that is all part of having fibro.
