tasty recipe for black bean, mushroom & quinoa stuffed peppers (vegan).2 tbsp olive oil1 med onion finely chopped (about 1 cup)3 cloves garlic, minced2 cups finely chopped mushrooms1 tbsp chilly powder1 tsp sea salt1 (15 oz) can tomato sauce1/4 cup water1/2 cup quinoa4 lg bell peppers1 (15 oz) can black beans (drain & rinse)1 tsp maple syrupfresh Cilantro for garnish- In lg sauce pan cook onions in oil until translucent- Add garlic and mushrooms and saute for about 5 min (until mushrooms release their water)- Stir in chilli powder and salt, add quinoa, 1 cup of the tomato sauce (reserve the rest) and the water, lower heat and cover, simmering for 20 min, stir once.- Preheat oven to 350 degrees- Boil lg pot of water, place peppers (topped and seeded) in boiling water for 5 min- Drain and place in baking pan- combine beans and syrup with quinoa mixture and spoon into peppers- pour remaining tomato sauce over peppers- bake in 350 degree oven for 15 min- remove, garnish with cilantro and serve
