I've made this recipe twice now, and while it makes 18-20 muffins (depending on how full you fill your muffin cups), they freeze
perfectly.

French Breakfast Puffs recipe from The Pioneer Woman's cooking blog. (The link has tons and TONS of photos; dial-up users beware. It slows down my high-speed connection, so.)
They're quite, um, not-healthy? And not for the faint of heart? But they're delicious. I usually just have them for dessert and the occasional between work and dinner snack. I freeze them the next day, but all you have to do is pull them out of the freezer and microwave them for 20-30 seconds and they're perfect (and also I save the extra cinnamon and sugar mixture to put on them as extra topping once they're warmed up).
