Crock Pot: Greek Chicken with Feta  
Cooker size: 3 Quart
Serves: 2-4
Cook Time: Low, 6-8 hours, cheese added in last 15 minutes.

Ingredients:
1 3 oz block of feta cheese, or equivalent amount pre-crumbled
1 tablespoon olive oil
4 boneless chicken thighs
1 medium yellow onion, thinly sliced
1 clove garlic, minced
Black pepper and salt to taste
1 14.5 oz can tomatoes, with juice
1 tablespoon tomato paste
Pinch of oregano.

If using a block of feta, place the feta in a bowl with cold water to cover, and set aside (this leaches out some of the salt)  If using crumbled, omit salt as a seasoning.

Heat the olive oil in  a medium sized skillet and brown the chicken on both sides.  While the chicken is browning, grease the inside of the crock with oil or nonstick cooking spray. 
Lay the onion and garlic in the bottom. 
Place the browned chicken on top, sprinkle with salt and pepper to taste, and add the tomatoes and paste and oregano.

Cover, and cook on low, 6-8 hours.

With 15-20 minutes to go: Add feta in slices, or crumbles, to the crock.  Cover again, and allow to melt.
Serve over pasta, rice or cous cous, with a Greek salad.

Rotisserie chicken  
Today at the store I found rotisserie chicken on sale for 2.99 and while I tend to worry about cooked food on sale, if I divide it up and freeze it tonight, I'm not TOO worried. I was thinking about rotisserie chicken in general, and even if not on sale, it's occasionally worth it to grab as long as you can stretch it to 4 - 5 meals + soup (it's the +soup that makes it especially cost effective). As I've found it's hard to get enough bones for soup on my own. *G*

So, help me 1_eats_kenobi! Tell me your rotisserie chicken ideas and recipes, tips and tricks.

Tandem Cooking  
I am the laziest cook that ever lived. Meaning, if I could actually survive on it, I would eat cookies for every meal (especially if they are delivered right to my door). So, to force myself to eat Real Food, I have to work out crazy strategies. It is like World of Warcraft, except with leftovers. I call it tandem cooking, by which I mean "use one ingredient 2+ times in 1 week." This is how I force myself to use fresh foods before they go bad; and it short-circuits some of my laziness; and it means I am hardly ever staring at the kitchen going, "OMG I have to cook from scratch again?"
