I'm massively in love with dairy and I'm trying to basically eliminate all cow products from my diet, focusing on beans and poultry.  In particular, I'm especially interested in bean/lentil recipes, not including garbanzo, that are quick and easy, and include little or no tomato.  I love soups.  I've looked at some recipe books, but thought that some here might have some good ideas.

Mint recipes needed! Non-alcoholic preferred  
My mint plant is getting so big I'm going to start charging it rent and ask it for help with the cable bill.  But a girl with a day job can only drink so many mojitos/juleps during the work week.

What have you got for tasty uses for fresh mint?   Foods, beverages, cheap, easy and suited for one.

Meatloaf recipes wanted!  
Got a favorite family, or cookbook meatloaf recipe?  Please please please post here.  I am hungry for meatloaf, and off to call my Mom for the recipe she always made.

Also, I have a theory.  No two families make meatloaf the same way.

Any scaling-down hints, while we're at it?  Since we're looking at solo eating.

Broccoli Rabe  
There was lovely looking broccoli rabe at my produce truck this week, so I got a bunch. Now - a bunch is enough for two meals for me. And I've got the first meal planned out:
wash broccoli rabe and cut into 2-3 inch lengths. Blanch. Drain.

Sautee in olive oil a whole bunch of garlic until it starts to brown. Add broccoli rabe.

In a flat pan, warm up a tortilla. Flip it over. Add some shredded sharp cheddar cheese, a tablespoon or two of the last of the carnitas I have in my fridge, and a spoonful or so of cooked broccoli rabe... some more cheese, fold over the tortilla - viola quesadilla.
But what can I do with broccoli rabe that does not involve sauteeing it with garlic? I mean - I love that, but I've done it enough that it is time to experiment with other options.

Rotisserie chicken  
Today at the store I found rotisserie chicken on sale for 2.99 and while I tend to worry about cooked food on sale, if I divide it up and freeze it tonight, I'm not TOO worried. I was thinking about rotisserie chicken in general, and even if not on sale, it's occasionally worth it to grab as long as you can stretch it to 4 - 5 meals + soup (it's the +soup that makes it especially cost effective). As I've found it's hard to get enough bones for soup on my own. *G*

So, help me 1_eats_kenobi! Tell me your rotisserie chicken ideas and recipes, tips and tricks.

TOFU!  
You all don't get cracking you're just going to see me ask questions and post recipes and that won't be so much fun.

Here's tonight's conundrum.

I finally found tofu. YAY!

Let's use the comments of this post to talk about various types of firmness, warning signs, (my personal question) how long to marinate it, etc. I encourage you to post recipes regarding tofu to the community.

MOD QUESTION: Anyone interested in theme weeks? I figure it might be weird for some people to just-- post, so maybe if I give out a 'prompt' we'll get a bit more traffic.
